With the school year wrapping up, I am just about able to catch my breath. And, especially, with the three-day weekend, I definitely wanted to get another country under our belts. So, I decided to cook a Columbian feast for our friends during the Memorial weekend and began looking for some recipes. I found this blog, written by Erica, a Columbian by birth who now lives in the northeast United States; her recipes are based on her grandmother's tutelage. Perfect. I love recipes from grandmothers! I didn't follow Erica's recipes exactly - no surprise there - but I did use them as inspiration.
