SRC September Reveal: Sweet Beginnings

It's time for the September Secret Recipe Club reveal. What's the Secret Recipe Club? It's a group started by Amanda of Amanda's Cookin' but recently handed off to April of Angel's Homestead. Each month, every participant is assigned to someone else's blog from which they pick a recipe - or two - to make and post, but it's all a secret until the big day. Today's the day. I always love a kitchen challenge and some culinary adventure...and meeting new-to-me foodie bloggers.

Meet Jaida of Sweet Beginnings who writes: "I love food. All kinds of food. I love to cook it, eat it, read about it, talk about it...I just love food. I enjoy trying new types of food, though I am a little leery if it looks or sounds too odd." A woman after my own heart. The only thing I would change - for me - "I enjoy trying new types of food...and if I've never seen it, or heard of it, even better!" ;)

Jaida did a round-up of 25 different kinds of tacos. Not 25 taco recipes from a linky party that she hosted. Nope. Twenty-five different kinds of tacos that she made. Impressive! Naturally - not being able to remember the last time I made a taco - I decided to give it a shot. But there were so many from which to choose. These caught my eye immediately: shrimp and cabbage tacos with a yogurt-cilantro sauce, honey-garlic braised chicken tacos, and a pork tenderloin taco with tangy slaw.

I ended up combining several different ideas for a fun taco dinner!

Smoky Paprika Chicken & Carrot Tacos


1 onion, peeled and diced
3 stalks of celery, trimmed and diced
3 carrots, diced
2 boneless, skinless chicken - cubed
olive oil
smoky paprika
pink Himalaya salt
flower pepper
1/2 C chicken broth

In a large, flat-bottom pan saute the onions and celery in a splash of olive oil until softened and translucent. Add the chicken, carrots, spices, and chicken broth and braise until the chicken is completely cooked.

Spoon the mixture into tortillas and top with crumbled queso fresco.

  4. Mmm, I love smoked paprika. It's prob the spice I use the most. Smoked paprika chicken sounds really good in a taco. Great choice.

You're Invited: Take a (Virtual) Hawaiian Holiday with #FoodNFlix

Fall Break, Oahu, October 2017 For June, I am hosting  Food'N'Flix , the movie-watching, food-making group rallied by Heather of  All Roads Lead to the Kitchen . This week, my older son was supposed to graduate from high school and we were supposed to leave on a family vacation to the Big Island. But, as enter our eleventh week of being sheltered in place to flatten the curve of the coronavirus, all of our summer plans were canceled, including this long-planned graduation trip to Hawaii. Boo. I understand the need to self-isolate. And we are abiding by the social distancing guidelines put in place by our state. But, boo, nonetheless.
