When I saw the dinosaur kale in my High Ground Organics CSA box this afternoon, I was excited. Kale always means a quick, nutritious side dish for dinner...and one the boys devour. You can use this same process on any hearty greens, such as chard or mustard greens, but kale is our favorite.
4 garlic cloves, smashed and peeled
olive oil
kale, rough chopped
water
orange juice
soy sauce
In a large flat-bottom pan, soften the garlic in olive oil. Add the kale and cook till the leaves begin to wilt. Add a splash of water and a splash of orange juice. Done in less than ten minutes! Cook till the stems are fork tender. Season with soy sauce and serve hot.

My Aunty has a scrumptious Caesar Salad recipe with her own homemade dressing. This picture made me think of it. I'm not even hungry and it all looks so good! Haha.. you've got me hooked. :)
