Riley helped me make these Albanian cookies. I think I'd prefer them with a little bit more lemon flavor. Next time I think I'll add more zest and use the juice of the lemon for a bit more zing.
1/2 C plain organic yogurt
1 egg
1/2 C granulated organic sugar
1/4 C butter, melted
1/2 t baking soda
1/2 t baking soda
zest of 1 lemon
2 C white whole wheat flour
Mix the baking soda in the yogurt, add the other ingredients together to make the dough. Pinch off pieces of the dough and shape into ovals about the size of a walnut, then place them on a buttered baking stone, leaving space in between each piece of dough. Sprinkle with powdered sugar and bake in a 350 degree oven for 20 minutes.
