When I saw organic sweetened condensed milk and canned organic pumpkin at Trader Joe's this evening, I thought two words: pumpkin fudge.
- 3 C semisweet chocolate chips
- 14 oz. organic sweetened condensed milk
- 4 T pumpkin puree
- 1 t ground ginger
- 1 t ground cinnamon
- 1 t ground cardamom
- 1 t ground nutmeg
- candied kumquat peels
Cook the above ingredients over a medium flame till smooth. Remove from heat. Pour mixture into a foil-lined baking dish. Press candied kumquat peel pieces into the top. Let cool completely. Cut into small cubes.
I made another batch of pumpkin fudge today too! I think it's my new favorite confection.ReplyDelete
