Mini Pearls of Wisdom Cookies

Today, I am sharing these toothy, spiced cookies made with hazelnut flour, topped with a tangy royal icing, and decorated with mini pearls from event sponsor Sweets & Treats.* 'Fish Food' is a nonpareil sprinkles mix that's shimmery and summery.

I didn't think of them as 'pearls' until my Precise Kitchen Elf requested these in his lunch. "Mom, please pack me the ones with the pearls." What pearls? "Those little mini pearls." Ahhh... 

Ingredients makes approximately 3 dozen 2-1/2" cookies
Cookie
  • 12 T (1 1/2 sticks) butter, room temperature
  • 1/2 C lightly packed dark brown sugar
  • 1 T honey
  • 1 T unsulphured molasses
  • 1 1/2 t ground cinnamon
  • 1 t ground ginger
  • 1/2 t ground allspice
  • 1/2 t ground cloves
  • 2 C flour, plus a little extra for rolling dough
  • 2/3 C finely chopped hazelnuts or hazelnut flour
  • Also needed: parchment paper, rolling pin
Glaze
  • 2 eggs whites
  • 4 C powdered sugar
  • Also needed: sprinkles for decorating (prefer Sweets & Treats)

Procedure
Preheat your oven to 350 degrees F.

Beat butter, honey, molasses, brown sugar, and spices until lightened and fluffy. Add the flour and chopped hazelnuts. Mix until the dough comes together in a ball.


Roll out the dough on a lightly floured surface until about 1/4 to 1/2 inch thick. Cut out cookies (I used a small cup about 2.5 inches in diameter), and place on a baking sheet (I lined mine with parchment paper)

Bake for 10 to 12 minutes. They should be lightly golden on the bottom and still pliable. They will firm up as they cool. Let cool completely on a wire rack.

Glaze
Beat egg white to stiff peaks. Add in the powdered sugar, 1 C at a time. Beat to peaks with each addition. Spoon a dollop over the fully cooled cookies and spread as close to the edge as you'd like. Top with sprinkles. Let the glaze harden before stacking and storing.
