My Rhubarb-infatuation is still in full-swing. Tonight I decided to give roasting them a try...to toss on top of plain yogurt for dessert. Can I say, "Yummy?!" Yummy.
And so, so easy...
Preheat oven to 350 degrees.
Trim 4-5 stalks of rhubarb into 1-2" pieces. Mine were a little bit long. Place them in a baking dish
Sprinkle them with organic granulated sugar - about 1-2 tablespoons should do it.
Drizzle them with orange juice - maybe 2-3 tablespoons.
Cover the dish with a foil and roast for 20-25 minutes. The rhubarb will be soft, but not falling apart.
For the yogurt dessert...
Place plain yogurt in your serving bowl. Drizzle with honey. Place 3-4 piece of roasted rhubarb on top. Top with granulated honey.
That's it!
