Spiced Honey Hazelnut Cookie
Though I have a ridiculous number of cookie cutters, my most used are my hearts. And for this recipe, I used the silicone baking mat and sugar from event sponsor Dixie Crystals.* Since this is a back to school event, I used hazelnut milk (my recipe here), however, for a more adult treat, use hazelnut liqueur as the liquid in your glaze.
Ingredients makes approximately 3 dozen 2" cookies
Cookies
- 12 T (1 1/2 sticks) butter, room temperature
- 1/2 C brown sugar, lightly packed
- 2 T raw honey
- 1 1/2 t ground cinnamon
- 1 t ground ginger
- 1/2 t ground allspice
- 1/2 t ground cloves
- 2 C flour, plus a little extra for rolling dough
- 2/3 C finely chopped hazelnuts or hazelnut flour
- 1 t salt
- Also needed: rolling pin, cookie cutter
Glaze
- 1-1/2 C powdered sugar (prefer Dixie Crystals)
- hazelnut milk, as needed (you can use any kind of liquid you wish)
Procedure

Preheat your oven to 350 degreees F.

In a large mixing bowl beat butter, brown sugar, honey, and spices together until lightened and fluffy.
Add the flour, chopped hazelnuts, and salt. Mix until the dough comes together in a ball.
Roll out the dough on piece of parchment paper until between 1/4" and 1/2" thick. Cut out cookies (I used a heart shape about 2-1/2" diameter) and place on a parchment paper or silicone mat-lined baking sheet. Bake until lightly golden on the bottom, approximately 10 to 12 minutes. These will firm up as they cool. Cool completely on a wire rack before glazing.
Glaze
Place powdered sugar in a medium mixing bowl, then add hazelnut milk - or other liquid - a little at a time, whisking until smooth. Repeat until you have a pourable consistency. Drizzle over the fully cooled cookies and let the glaze harden before stacking.
Or you can dip them and add some sprinkles! Totally up to you. I drizzled and my Enthusiastic Kitchen Elf dipped.
