Sesame- Gluten Free Soy Meatballs

Since we had some gluten-free friends coming to Dylan's birthday party, I picked up some gluten-free soy sauce at Whole Foods. You can't taste the difference (for the gluten-tolerant folks) - and it means that our gluten-intolerant pals can eat them. That's a no brainer.


2 T lower-sodium gluten-free soy sauce
1 T dark sesame oil
1 T minced ginger
2 T crushed garlic
2 pound ground turkey
2 C spinach leaves, roughly chopped

Preheat the oven to 375°. Combine all of the ingredients in a large bowl. With moist hands, shape turkey mixture into larger than walnut-sized meatballs. Arrange meatballs in a single layer on a parchment lined jelly-roll pan, about an inch apart. Bake meatballs at 375° for 30-40 minutes or until done. They will be firm to the touch. Drizzle with more gluten-free soy sauce while cooling.

Hot Chocolate Agasajo-Style {Spice It Up!}

photo by D For my Spice It Up! kiddos this week, I was looking for an exotic drink to serve while we learned about saffron. I found a recipe from food historian Maricel Presilla that mimicked traditional Spanish hot chocolate from the 17th century where it was served at lavish receptions called agasajos .   Here we are at November #EattheWorld event. What a year this has been! This challenge has been one that gave us some excuse for virtual travel as we've been sheltered-in-place with the coronavirus epidemic for most of 2020.
