I did it! I did it! I finally made pancakes that got the nod of approval from the pancake-snobs for whom I cook. I adapted the Pikelets from New Zealand that we cooked during our Cooking Around the World Adventure.
3 eggs
1/2 C organic granulated sugar
1-1/2 C milk
3 C flour
3 t baking powder
dash of salt
3 T olive oil
Beat the egg and sugar until thick and add with the milk to the sifted flour, salt and baking powder.

Lastly add olive oil. Mix until smooth and cook on a hot greased girdle.
To serve the pancakes, I smeared them with homemade butter, sprinkled them with powdered sugar, and topped them with fresh raspberries.
