Kruidnoten (Ginger Nuts) - The Netherlands

Kruidnoten, yes, this translates to 'ginger nuts.' Love it!


  • 1-3/4 C white whole wheat flour
  • 2 t baking powder
  • freshly ground sea salt
  • 1/2 C raw turbinado sugar
  • 7 T butter, room temperature
  • 3 T milk
  • 4 t pumpkin pie spice
  • 1 t ground ginger
  • 1/2 t baking soda
  • zest of 1 meyer lemon
  • 1 egg white, beaten

Mix together all the ingredients in a large bowl and knead to shape the dough into a ball. Cover the dough ball with plastic wrap and refrigerate for an hour. Preheat the oven to 350 degrees.

Roll large marble-sized balls of dough (of approx. 3/4"). Place balls on the cookie sheet. Brush with egg white and sprinkle with powdered sugar. Bake for about 20 minutes, or until the cookies turn a slightly darker shade of brown. Allow to cool.

Makes about 60 kruidnoten.
