Beet-Kissed Savory Goat Cheese Truffles

Years ago a fellow blogger introduced me to savory cheese truffles and I have been making them ever since! But feel free to use whatever dried fruits and herbs you have on-hand. 


Since we are celebrating Valentines' Day, I wanted to make them pink. And I had this powdered mix for beet latte in my cabinet, but I have used just powdered beets before or even a few drops of food coloring.

Ingredients makes approximately 12
  • 8 ounces cream cheese
  • 8 ounces goat cheese 
  • 2 teaspoons powdered beet or beet latte mix (or a few drops of food coloring)
  • 1/3 cup chopped dried hibiscus
  • 1/3 cup chopped candied ginger
  • 1/2 cup chopped macadamia nuts
  • Also needed: hand-blender; scoop, optional but it makes portioning consistent

Procedure

Place cream cheese, goat cheese, and powdered beets in a medium mixing bowl. Use a hand blender to combine the cheeses. If the cheese is too soft, you can refrigerate it until it reaches the consistency you prefer.


In a small mixing bowl, stir together the chopped hibiscus, candied ginger, and macadamia nuts. 


Use a scoop or a spoon to portion out the cheese. Roll the cheese in the topping. Make an indentation at the top and press the bottom into a point to form a heart shape.


 Set on a serving platter. Enjoy!

Quick Pickled Red Onions and Radishes

If you've been reading my blog for even a short amount of time, you probably know how much I love to pickle things. I was just telling a friend you can pickle - with vinegar - or you can ferment - with salt - for similar delicious effect. The latter has digestive benefits and I love to do that, but when I need that pop of sour flavor quickly, I whip up quick pickles that are ready in as little as a day or two. I've Pickled Blueberries , Pickled Asparagus , Pickled Cranberries , Pickled Pumpkin , and even Pickled Chard Stems !
