I am not big on plain ol' oranges. Blood oranges, clementines, pumelo, any other citrus and I am excited. So when I saw the clamshells of kumquats at the grocery store, I grabbed two and my mind started to churn on what delectable goodies could I make with them, besides just rinsing and popping them in my mouth like popcorn. While Jake was at a play with some friends and the boys were soundly sleeping, I decided to make some candied kumquats. So easy!
1 C water
1 C organic granulated sugar
12 oz kumquats, washed and dried
Slice the kumquats into thin coins. Create a simple syrup by bring the water and sugar to a simmer and cooking till the syrup thickens. Place the kumquats and simple syrup in a small pot over medium heat. Bring to a boil then reduce the heat; simmer for 10 minutes, stirring often.
The kumquats are done when the syrup is slightly thickened and sticks to the fruit.
Using a slotted spoon, transfer the kumquats to a bowl full of granulated sugar. Roll the candied kunquats in the sugar. Lay out on a parchment-lined cutting board and leave to dry.
