After reading about this simple sparkling cocktail, I knew that I wanted to make a version for New Year's eve. Actually, I was drawn to its name...then I read the ingredients. Either way, I was intrigued.
Its name derives from the Italian word; sgroppare, to untie or undo. So, sgroppino means, roughly, 'little un-doer' or 'little un-knotter.' Sounds perfect for a night of relaxing!
I skipped the vodka, making it even more simple than the original version that you might find in the Veneto region of Italy. Cin cin.

Ingredients
- lemon sorbet
- sparkling wine (traditionally it would be made with prosecco, I had a French sparkling)
Procedure
Scoop lemon sorbet into your flutes or serving glass. Fill with sparkling wine. Take care not to let it overflow. Enjoy!
