Eating from a Pølsevogn + The Copenhagen Affair #FoodieReads

This weekend I picked up The Copenhagen Affair  by Amulya Malladi* even though I didn't really care for the other book I read by the same author - Serving Crazy with Curry * . I must have been feeling nostalgic for our friends in Denmark as well as missing the adventure of actually traveling. I still can't  believe that we've been on shelter-in-place order for a year. Though those restrictions are slowly lifting as more and more people are able to be vaccinated. On the Page Malladi describes this book as her love letter to Copenhagen, her favorite city in the world and one in which she lived for over a decade. You can tell. And I think that was a huge part of the appeal in reading this book for me. But let me back up.  Sanya and Harry are Californians who are transplanted to Copenhagen after Sanya has a nervous breakdown and Harry needs to finish a business acquisition in Denmark. It's time for Fish Friday Foodies' April 2020  event. W e are a group of seafood-loving bloggers, rallied by Wendy of  A Day in the Life on the Farm , to   share fish and seafood recipes on the third Friday of the month.  And this month, I am hosting. I asked the bloggers to share recipes that were inspired by their travels. I wrote : " Pick a seafood recipe that you ate while away from home that you were inspired to re-create when you got home! Ceviche in a Latin American country? Paella in Spain? Bring it all!"  When I selected this topic earlier in the year, I had no idea that most of us would be sheltered-in-place for nearly a month by posting date as we all attempted to flatten the curve of the coronavirus pandemic. Lemon Cardamom Nisser Cookies

This is an iced Christmas cookie that I made because D is a little nisser -obsessed. If you aren't sure what the heck a nisse is, read this post:  Glædelig Jul, Nisser, and Mormor Agnes’ Æbleskiver . In any case we have nisser galore around the house and I thought it would be a fun cookie to make. I started with a Santa cookie cutter and trimmed down the pom-pom at the top of the hat because everyone's a critic. "That doesn't look like the profile of a nisse !" Oye. Because of the nisser 's Danish roots, I made a lemon-cardamom spiced sugar cookie as the base along with a lemon icing. The nose is a chocolate-covered salted caramel ball. Ingredients Lemon Cardamom Sugar Cookies 2-3/4 C flour 1 t baking powder 1 t salt 3/4 C butter, softened 1 C organic granulated sugar 2 eggs zest from 1 organic lemon (I used a Meyer lemon), approximately 2 t 1 t ground cardamom Royal Icing 3 egg whites, or more to thin icing 6 C org...

Welcome to our final 2019 post for our Eat the World project, being spearheaded by Evelyne of  CulturEatz . Here's  her challenge . This is definitely one of my favorite monthly projects. And so far this year, we've traveled by tabletop to Ethiopia , England , Georgia , Cambodia , Israel , Finland , Puerto Rico , Egypt , Ukraine , and Portugal .
