Autumn Enchiladas with a Three Chile Sauce #Sponsored

This is a sponsored post written by me on behalf of Selefina spices.  Complimentary product was provided for this post and this page may contain affiliate links.  However, all opinions expressed here are my own. Let me start with this: I don't have shots of my finished dish on serving plates because I made these to send up with the guys on their mountain biking trip. But of the food I sent up, this was the smash hit - even more than my lasagna! - so I am writing it up now. When a contact from  Selefina * asked me if I would like to sample their new line, I looked through the website and agreed immediately. Selefina is new venture from the people behind Adagio Teas. They have used their experience in global sourcing and making connections to find high quality spices and seasonings. And by purchasing in bulk and using their own brand for labels, costs are kept lower for the consumer. It's a win-win and, from what I've tried, the products are amazing. Stay tuned f...

D's Barley-Stuffed Pumpkins

D and I have been watching A Mind of a Chef . On one hand, I love that he enjoys the creative side of cooking - it's definitely not drudgery - but I'm torn between whether or not I appreciate his ardent insistence on his ingredients. But I do know where he gets it. Here's the Mind of the Wom... It began with some extra pumpkins from our High Ground Organics CSA . I had ordered them for myself. But D saw them the same day that the request came for his class Thanksgiving feast sign-up.  "I'll bring those...stuffed with barley and kale," he announced, pointing at my pumpkins.  What? You'll bring what?!  "Those pumpkins, Mommy. I'm going to cook them for my class."  I bit my lip, silently bid my visions of pumpkin puree goodbye, and encouraged him, That's a great idea, Wom. I know it will be delicious.  I especially appreciated the ' I'm going to cook them' part as we are in the middle of moving. I h...

Meatloaf-Stuffed Mini Pumpkins for #PumpkinWeek

Hi and welcome to day 5 of #PumpkinWeek hosted by Terri of  Love and Confections . We are celebrating our love of the season with a whole week of pumpkin goodies, leading up to National Pumpkin Day. 17 Food Bloggers have come together to share over 65 recipes with you. In addition to homemade pumpkin puree, pie, and cookies, we are also sharing savory pumpkin dishes like hummus, chili and pumpkin corn chowder. Come back every day for #PumpkinWeek recipes. You can also find these great recipes and more on  Love and Confections' #PumpkinWeek Pinterest Board ! For this fifth day of #PumpkinWeek, I have a funny story. Last year, my then 9-year-old had a pet pumpkin. He had gotten it at a market at the beginning of the month and it slept on his pillow and watched him do his homework. One day I jokingly threatened to cook his pumpkin. I  was  joking, but D was not amused. So, needless to say...when I served this dish, the first thing he did was run to his ro...

Glass Pumpkins and Autumnal Dishes

We celebrated the advent for autumn with a trip to the glass pumpkin patch at MEarth . You all know my season obsession with pumpkin, right? Well, these won't cause me to break out in hives from pumpkin overload! We wandered the tables and picked our top three pumpkins each. Organized mostly by color, Dylan gravitated toward the table with pumpkins in every shade of blue from the palest cerulean to stormy navy. Riley liked pumpkins in the sunny shades of yellow. Jake preferred the green ones; and I loved the ones that were funky. My favorite one was a quince-hued pumpkin - you know that rosy color they take on after they are poached? - with deep cantaloupe-colored spots. Some looked downright edible; others were fanciful in their colors and textures. They were all vibrant and gorgeous. And, though it was for a really good cause, we walked out pumpkin-less. They were pricey and I don't keep anything breakable and expensive in my house. Maybe when the boys get older... ...
