Hong Shao Niu Rou Mian (Taiwanese Beef Noodle Soup) #FoodNFlix

This month, I am hosting the Food'N'Flix group as we watch and -  hopefully - get inspired into the kitchen by Spirited Away . This is definitely out of the range of movies the group usually watches, but I hope that the other gals join the fun. On the Screen   imdb.com I had never heard of this movie until my boys purchased it on Amazon. They have long been fans of Studio Ghibli movies though I have never watched any of the movies with them. However, the first time they watched it, both commented that I should suggest it to my foodie movie group. I largely ignored that suggestion until I was reading through a list of top twenty-five films that food lovers have to watch. Okay. I was convinced and offered to host it for our foodie, movie-watching group this month. For those unfamiliar, as I was, Hayao Miyazaki is the Japanese animator, writer, director, producer, and filmmaker whose work with Studio Ghibli has resulted in creative and influential animated films, including...

Russia: Rustic Borsch with Caviar (Root Veggie Soup)

I don't know why I always thought borsch was a cold beet soup. Got that wrong! No, no, no, this was a warm, flavorful, nutritious winter soup that I garnished with some sour cream and a dollop of caviar. I also thought that borsch only had beets in it. Wrong again, this soup has tons of earthy goodness in the form of onions, carrots, potatoes and more! And while it can be blended smooth, I opted to leave it chunky and rustic. I served this with some "periwinkle" bread. Translation: pumpernickel bread. I guess Dylan thought I said periwinkle. 6 small beets, roasted, peeled, and diced 4 potatoes, roasted and diced 3 carrots, thinly sliced 4 stalks of celery, thinly sliced 1 small onion, peeled and thinly sliced 8 C organic chicken stock 1 C fresh chopped chervil 3 bok choy, chiffonaded freshly ground sea salt freshly ground pepper sour cream, for garnish caviar, for garnish In a large soup pot, brown the onion, celery, and carrots in a splash of olive oi...

Chicken-Kalamata Enchiladas

2 T minced garlic 6 chicken thighs, deskinned and cubed olive oil dash of smoked paprika dash of ground cumin freshly ground sea salt freshly ground pepper 1 C chopped bok choy 1/2 C pitted kalamata olives 2 C shredded cheese (I had a medium cheddar) In a large flat-bottom pan, saute the garlic in olive oil until it browns slightly. Add chicken and cook through. Fold in the bok choy and olives. Season with spices, salt, and pepper to taste. Set aside. Homemade Enchilada Sauce 2 t cornstarch dash of smoked paprika 1 C tomato sauce 1 C organic beef broth 1 t ground cumin 1 T minced garlic Mix all of the wet ingredients in a small saucepan. Whisk in the cornstarch until there are no more lumps. Bring to a simmer and cook until desired consistency. Set aside. Preheat the oven to 350 degrees. To assemble, lay two corn tortillas in a cutting board, or plate, overlapping at one edge - to make a "longer" wrapper. Lay shredded cheese and chic...

Green to the Sixth Power Rice

I decided to go all green when I cooked my Lotus Foods organic jade pearl rice . So while the rice steamed in one pot, I sauteed minced garlic, slices of fennel, zucchini coins, and chopped bok choy in a splash of olive oil. When the rice was cooked, I gently incorporated it into my green veggies and seasoned it all with minced fresh dill and fresh tarragon. What a tasty - and green! - sidedish. And because I was always taught to have a minimum of three colors on a plate, I served this with chicken sausages, bright purple kimchi, and roasted golden beets.
