Vincisgrassi #LasagnaDay

We make and eat lasagna frequently. I've even got my husband to help me - when I made my 4-2-5-5 Lasagna  for the robotics team - and the boys were in charge of making Eight Cheese, Three Meat Lasagna for our friends' joint birthday dinner. I've also made Seafood Lasagna , Lasagna Bianca , and Pumpkin Lasagna . So, when Christie of A Kitchen Hoor's Adventures asked us to join her for celebrate National Lasagna Day, I knew I had to try something new. Christie wrote: "Bring it! Your best lasagna recipes for MY holiday! They called me Garfield. Just sayin." LOL. Kalamon-Chocolate Cantucci #OurFamilyTable

Last summer, when R and I were brainstorming about the dessert course for his Mediterranean fundraising dinner, I mentioned cantucci because I knew they were something I could do ahead of time...and easily. We discussed different combinations and he remembered when I made a chocolate-olive version before. "That's unique and interesting, Mom. Can you make that again?" Sure thing!  Somehow I neglected to post a recipe. I remedy that today as the From Our Dinner Table group posts about all things chocolate. Red-Eye Baked Beans #CowboyDayCookAlong

Recipe for Rebels invited me join in on a Cowboy Day Cook Along. Read his invitation here . Not knowing what to make, I put out the question to social media. I got sixty-six responses. Sixty-six? Who knew that that many of my friends and family would have opinions. Here are some: Beans Steak, baked beans, and cornbread Baked beans. Steaks over a campfire. Cowboy caviar Beans and cornbread Pinto beans, cornbread Beans, bacon and lard Ribeyes. Beans. Ribs. Beans. Meat and potatoes Beans in a can Short ribs and ranch beans You see a trend, right? The funniest suggestion was my cousin's who wrote: "Cowboy cooking + Cam = Rocky Mountain oysters." My nephew, a rancher, responded that he could help. Gulp. I will try anything once, but I raised the question to my trio and they all shook their heads. No, no, and nope. Fine. Back to the beans. I started with dry beans.  Click for a how-to:  here . You can do this the night before and keep in the fridge...

Panko-Crusted Chicken & Shichimi Togarashi Waffles with Kabocha Fries + 2018 Still Kraisey Merlot

To commemorate milestones, I let the boys pick a celebratory meal. Anywhere they want to go or, more likely, anything they want me to cook. D finished his summer school math class yesterday and asked for his favorite: chicken and waffles. Easy. Done. What we didn't know, when he picked the menu, was that he got 100% on his final and will be headed into calculus next year. As a sophomore. He logged in and saw his score and grade while I was cooking. Sometimes I just stare and them and wonder where they got their aptitude for math and science. It certainly wasn't from me. In any case, he wanted plain ol' chicken and waffles; I decided to shake it up and add some Japanese flavor flair. This is a pretty simple recipe with four parts that come together into something incredibly tasty. Try it and tell me what you think! Also, I did the kabocha fries first and served them room temperature. The chicken was last and served hot. Shichimi Togarashi is also called Japanes...
