Soccarat Success!

Last week, I got some paella pointers from our friends from Spain. Something happened to my original post. Darn it. I'll have to rewrite it now! Tonight I tried my first solo paella. I didn't use the food coloring packet, so I'll have to work on the color.  But I used a little bit of chicken... I used the paella rice Juan recommended... I used my long-neglected pan... And I listened to the rice crackle... Then I tented it for ten minutes. And... I did it! I created soccarat. Success!! The boys were impressed.
