Venison Chevre Pizza {Gluten-Free}

Pizza night at the Manns is an exercise of topping the dough with whatever happens to be in the fridge. Last night I found a package of venison sausage (thank you, Corralitos Market and Sausage Company!), a log of chevre, and leftover roasted red peppers. Sweet! It sounded like a great combination...and it was. So easy. And, by the time everyone was done with homework, pizza was ready. Pronto al tavolo! Ingredients  makes 1 large rectangular pizza approximately 10" x 13" Crust* 3/4 C white rice flour (you can use brown rice flour instead) 1/2 C tapioca flour  1/3 C sorghum flour  1/3 C buckwheat flour 1 t xanthan gum 1 t sea salt 1/2 C whole milk 1/4 C water 2-1/4 t active dry yeast (or 1 packet) 2 t organic brown sugar 1 - 2 eggs (2nd egg if the dough is too dry) 3 T olive oil + more for baking the crust Also needed: parchment paper Toppings fresh tomato sauce chevre venison sausage, cooked and thinly sliced ...

Steamed Mussels with Sea Urchin and Lamb Sausage + Tobin James' Chateau Le Cacheflo

After a friend told us that the sea urchin were back in town this weekend, we drove to the wharf to pick up a few. D cleaned them and we served them as part of our first course for dinner when Jenn and Nic came over after a park play-date on Saturday. For our main dish, I wanted to use fresh mussels and some lamb sausage from Corralitos Market & Sausage Company...and pair it with another  Tobin James Cellars  wine. We did use some of the sea urchin in this dish, too. Ingredients 1 lamb sausage, cooked and diced 1/2 onion, peeled and diced 2 T olive oil 3 garlic cloves, crushed 1 T curry powder 1/2 t ground sumac + more for sprinkling 3 to 4 fresh urchin egg roe + more for serving 1/2 C fresh tomato sauce 3/4 C dry red wine 2 T fresh parsley, chopped steamed rice for serving Procedure Heat olive oil in a large pot. Corralitos Sausages

When we were planning R's birthday dinner for camping, he wanted venison...and salmon. I have only myself to blame for my kid's culinary requests. But, at least, he's not asking me for Doritos and bologna. Not having a ready supply of venison, I called up to the Corralitos Market and Sausage Company . It would take a week to get venison steaks, but they had venison sausage! Woohoo. So, as part of the birthday campfire dinner, we served four different kinds of Corralitos sausages, including the venison, and their gluten-free marinated chicken breasts.
