I had a few extra zucchini and decided to whip up something sweet for breakfast tomorrow.
2 C white whole wheat flour
1 t baking powder
1/2 t baking soda
1/2 t smoked sea salt
1/2 t ground ginger
1/2 t ground cardamom
1/2 t ground nutmeg
1 t ground cinnamon
1/2 C organic whole milk yogurt
1/4 C unsweetened applesauce
3 T canola oil
2 eggs
1/2 C organic granulated sugar
1 T unsulphered molasses
1-1/2 C shredded zucchini
Preheat oven to 350º. Lightly grease mini loaf pans. In a small bowl whisk together flour, baking powder, baking soda, salt, and spices.
In a large bowl combine yogurt, applesauce, canola oil, eggs, sugar, and molasses; whisk until well blended. Add flour mixture and stir until just combined. Add zucchini until just combined.
Bake at 350º for 35 minutes.
