Pumpkin Fudge with Candied Kumquat Peels

When I saw organic sweetened condensed milk and canned organic pumpkin at Trader Joe's this evening, I thought two words: pumpkin fudge.


  • 3 C semisweet chocolate chips
  • 14 oz. organic sweetened condensed milk
  • 4 T pumpkin puree
  • 1 t ground ginger
  • 1 t ground cinnamon
  • 1 t ground cardamom
  • 1 t ground nutmeg
  • candied kumquat peels

Cook the above ingredients over a medium flame till smooth. Remove from heat. Pour mixture into a foil-lined baking dish. Press candied kumquat peel pieces into the top. Let cool completely. Cut into small cubes.

    Yours looks amazing -- no surprise there. Those candied kumquat peel pieces sound like the perfect accompaniment to the pumpkin, chocolate and wonderful spices!
