I have a new favorite apple! I picked up some Pink Pearl apples during our Scotts Valley Farmers Market adventure yesterday. And, as Jake said, "they are the right color...and the right flavor." Yep, they are pink and shockingly tart. I love 'em.
Pink Pearls are absolutely stunning. The outer skin is unremarkable, a muted green barely tinged with a blush that hints at what lies beneath. When you cut into the apple, its flesh can range from a delicate azalea pink to a dramatic regal crimson. As I wrote: gorgeous.
These apples peak in August and are not available for long. In fact, I'm trying to figure out how to get my hands on some more before their brief season ends. As for their taste - they are deliciously tart, almost mouth puckeringly so. We ate a few fresh, but I mixed them with Pink Cripps in a tasty tart with a cheddar cheese crust. That recipe will come shortly.
So, if you can find this heirloom apple, get it. And tell me what you think.
