Thyme, Fennel & Blueberry-Infused Gin


When I asked for blueberry suggestions because the boys and I picked about five pounds of blueberries today, I got the usual suggestions - cobbler, pie, crumble. Then my friend Shiho said exactly what I was thinking: "Blueberry infused vodka... but I'd add some herb to make it extra unique!"

Well, I didn't have vodka. But I was definitely on board with the blueberry + booze + herb.

Ingredients
1/2 small fennel bulb, thinly sliced
1/2 to 3/4 C fresh blueberries
3 sprigs fresh thyme
gin (I used Hendrick's)

Procedure
Muddle the fennel and blueberries together. Add three sprigs of fresh thyme. Fill the jar with Hendrick's gin. Cover and put in the freezer to infuse overnight.

I'll be making some tasty libation with this tomorrow. The boys did complain about my choice. "Mom," they moaned, "why did you use the blueberries we picked to make something we can't have!?" Whoops.
