This was another dish that was inspired by an Azerbijani recipe, Sarımsaqla Göy Lobya (Azerbijani Green beans with Garlic). I liked that the vegetable is cooked, then chilled with a vinegar-based marinade, that results in a sort of fresh pickle.
Blanch the veggie of your choice in salted water. Strain and set aside to cool. Whisk crushed garlic, vinegar, olive oil and sugar - though I skipped the sugar and used quince syrup instead - together in a bowl and pour over the veggies. Leave for the flavors to penetrate. Sprinkle with finely chopped dill to serve.
