Skagen Macka #FishFridayFoodies

It's time for Fish Friday Foodies' October event. We are a group of seafood-loving bloggers, rallied by Wendy of  A Day in the Life on the Farm , to   share fish and seafood recipes on the third Friday of the month.  This is, easily, my favorite recipe sharing event of the month. I always come away with a list of recipes that I just have to try! This month Sue of Palatable Pastime rallied the Fish Friday Foodies to make fish or seafood sandwiches. The Fish Sandwich SmörgÃ¥sbord An InLinkz Link-up I considered what to make and asked Sue if she was okay with an open-face sandwich. She was! So, I decided to go with Sweden’s traditional skagen macka - sometimes known as Toast Skagen, or Skagen Toast. Let's get this out of the way, in the event that you're geographically savvy and know that Skagen is actually a port town in Denmark! This prawn and crème fraîche-topped toast is Swedish through and through. If you’re craving an authentic Danish o...

Potatoes Braised with Wine #KitchenMatrixCookingProject

Today we are continuing the Kitchen Matrix Project, after Mark Bittman's  Kitchen Matrix  cookbook. You can read about it:  here . I'm very excited about the dishes and the bloggers who are joining me. This month, Wendy at  A Day in the Life in the Farm  picked the recipes. I can't wait to follow along with her choices. This week, She picked 'Braised Potatoes + 3 Ways' for the group which means we could make simple braised potatoes, braised potatoes with wine, and braised potatoes curried in milk...along with any variations or adaptations that we needed or wanted. I opted to make a variation of his potatoes braised with wine this week, but can't wait to try the others. The Other Braised Taters An InLinkz Link-up Potatoes Braised in Wine slightly adapted from Mark Bittman's recipe I skipped the pancetta and swapped out the parsley for thyme and dill. This was a delicious, easy dish to make. And I can definitely see this process ...

The Enthusiastic Kitchen Elf's Easter Sparklers

Remember when the Enthusiastic Kitchen Elf criticized my menu for Nonna's Easter brunch? You can read that story: here . Apparently she needed drink pairings. D came up with three for her. He decreed that we were going to make a trio of sparklers for her; and they had to be pretty...like Easter eggs, too. From left to right: Cucumber-Beet, Lemon-Basil, Roasted Watermelon-Mint. He made the syrups and Nonna needed to mix them at the table. He told her 1 C of the syrup starter to 5 or 6 C sparkling water.  Here's a photo one of her guests sent me. For all of these, D prepared the sparkler starters, placing them in a mason jar. Then he poured the hot simple syrup over the other ingredients and let the flavors meld.  Simple Syrup makes one sparkler starter, double or triple as needed  Ingredients 1 C organic granulated sugar 1 C water Procedure Place sugar and water together in a medium saucepan. Over medium heat, cook until the sugar is comp...

Lacto-Fermented Pickles, Take 1

I have always made pickles with vinegar. Then I read that not all fermented foods are pickled and not all pickles are fermented. Huh? Naturally, I did more research. Here's what I found... Foods that are pickled have been preserved in an acidic medium. But those don't offer you the same probiotic and enzymatic nutritional value of homemade fermented vegetables. If you ferment vegetables, they will create their own self-preserving, acidic liquid that is a by-product of fermentation. Ubiquitous and beneficial lactobacilli proliferates to create lactic acid that pickles and preserves the vegetables. Okay, I was ready to try... Ingredients 6-7 cucumbers (I used organic seedless Persian cukes) 3 whole garlic cloves, peeled 2 to 3 fennel stems 1 T fresh fennel fronds 3 to 4 sprigs fresh dill 2 to 3 sprigs fresh thyme 1 to 2 sprigs fresh oregano 1/2 t fennel pollen filtered water 3 T Himalayan or unrefined salt  1 large, sterile glass jar with a lid ...

Ricotta Gnocchi with Asparagus Pesto

Here we are at April's  Improv Cooking Challenge  hosted by Lesa of  Edesia's Notebook . The idea: we are assigned two ingredients and are challenged to create a recipe with those two things. April's assigned ingredients: Asparagus and Eggs. I thought about different way to incorporate these two and mainly came up with breakfast foods. I, first, planned to make an asparagus eggs benedict. Then I started to get creative; I considered a savory cheesecake with roasted asparagus. Finally, I ended up having my Enthusiastic Kitchen Elf help me make Ricotta Gnocchi with Asparagus Pesto. Che squisito! Ingredients 2 C whole-milk ricotta (1 pound) 2 large eggs 1-1/2 C grated Parmigiano-Reggiano, divided into 1 C + 1/2 C portions 1/2 t freshly grated nutmeg 1-1/4  to 1-1/2 C flour 4 C asparagus, cut into 1-1/2" lengths zest from 1 organic lemon juice from 1 organic lemon  olive oil canola oil for pan-frying fresh dill for garnish ...

Dakos for #OneYrGreek #sponsor #giveaway

When  BenBella Books  invited me to join the first anniversary book tour for  It's All Greek to Me -- Transform Your Health the Mediterranean Way with my Family's Century-Old Recipes  from Debbie Matenopoulos, I was excited. First, I love Greek food. Second, I loved the cookbook when I reviewed it back in November (click to read my post  Souvlaki from Debbie Matenopoulos' "It's All Greek toMe" {#sponsor Book Review & Giveaway} ). Five months have gone by and that cookbook is still near the top of my cookbook stack. Now that's saying something. I have a lot of cookbooks. And, after I review a cookbook for a publisher, it often gets shelved and not pulled out until I remember something I wanted to try. But this one excels in inspiring me with its vibrant photography and easy-to-follow recipes. So, it has stayed in my to-read, or to-cook, stack right next to the couch where I read and plan my recipes. Today, I'm sharing Debbie's recipe for ...

Fully Loaded Tater Tot Casserole for #SundaySupper

Today the #SundaySupper crew is sharing Captivating Casseroles. Before deciding on my dish, I started with the question: what exactly is a casserole? A casserole, from the French word casse,  refers to a large, deep dish used both in the oven and as a serving vessel. The word also describes the food cooked and served in said a vessel. So, essentially, a casserole refers to anything cooked in a casserole dish. Okay. So a lasagna is a casserole? According to this definition, yes, an Italian casserole. A shepherd's pie is a casserole? Sure, a British casserole. Here's what I brought to the table...in my casserole dish.  My three boys eyed the dish suspiciously. I explained the project and shared the definition. "I've seen you bake cakes in that dish." noted Jake. "So, those cakes are casseroles?" posed R. Yes. I guess they are. "Cool. A cake casserole," said R. D just stared at the pan. It probably didn't help that I ha...
