Roasted Broccolini Soup #FreshTastyValentines #sponsor #giveaway


Here we are at day two of my multi-day, multi-blogger event Fresh Tasty Valentines. This recipe is so fast and so tasty. And I love that it can be on the table in less than thirty minutes. So it's perfect if Valentines were to fall on a weekday. I was inspired by the fresh broccolini from one of our event sponsors - Mann Packing - and herbs from another event sponsor - Gourmet Garden. Ingredients

  • 1/2 lb broccolini (that was one 8 ounce packages from Mann Packing)
  • olive oil
  • juice from 1 organic lemon
  • freshly ground salt
  • freshly ground pepper
  • 6 C chicken stock
  • 2 T parsley (I used lightly dried parsley from Gourmet Garden) + more for sprinkling
  • 1 T garlic (I used chunky garlic paste from Gourmet Garden)
  • 1 t lemongrass (I used lemongrass paste from Gourmet Garden)
  • 1 t ginger (I used ginger paste from Gourmet Garden)
  • crème fraîche for serving
  • Optional: broccoli flower for serving


Procedure
Preheat oven to 425 degrees F. Slice broccolini into 2" lengths and lay them on a parchment-lined baking sheet. Drizzle the broccolini with olive oil and lemon juice. Roast for 15 minutes until tender.


In batches, puree the broccolini in a blender  with chicken stock until smooth. Return the soup to the pot, add in remaining ingredients, except for the crème fraîche and broccoli flowers, if using. Bring soup to a simmer to heat through. To serve, garnish with a swirl of crème fraîche, broccoli flowers, if using, and another sprinkle of parsley. Serve immediately.

Quick Pickled Red Onions and Radishes

If you've been reading my blog for even a short amount of time, you probably know how much I love to pickle things. I was just telling a friend you can pickle - with vinegar - or you can ferment - with salt - for similar delicious effect. The latter has digestive benefits and I love to do that, but when I need that pop of sour flavor quickly, I whip up quick pickles that are ready in as little as a day or two. I've Pickled Blueberries , Pickled Asparagus , Pickled Cranberries , Pickled Pumpkin , and even Pickled Chard Stems !
