These are a sweet take on my usually savory biscuits such as the fennel-pepper biscuits that I made for our Befana feast. And I love that one bowl and 25 minutes later we have a warm, fresh-baked breakfast.
4 C white whole wheat flour
2 t baking powder1 t pink Himalaya salt
4 eggs
1 t pure vanilla extract
1/3 C organic brown sugar, packed
1/2 C olive oil
1/2 C warm water
1/2 C dried tart cherries
Mix all dry ingredients. Make a well. Add eggs, oil. vanilla, and warm water to the mixture. Pour into flour mixture. Mix well. Knead dough. Add cherries. Form into biscuits, placing them in a buttered pan. Bake in a 425 degree oven for 20 to 25 minutes or until golden.
Slather these with a tart lemon-ginger curd or any other jam you prefer.
