Pinolillo, also known as pinol, is a cornmeal and cocoa beverage that's very popular in Nicaragua. In fact, that Nicaraguans often refer to themselves as pinoleros. Rich and somewhat gritty, pinolillo is an ancient drink and is traditionally served in a dried gourd shell. We used mugs.
2 C milk
2 C water
1/2 C cornmeal
1 C unsweetened cocoa powder
2 C water
1/2 C cornmeal
1 C unsweetened cocoa powder
1/4 C organic granulated sugar
1 t ground cinnamon
1 t ground cinnamon
Place all of the ingredients in a large saucepan. Over a low to medium heat, whisk until smooth and frothy. Serve warm. The grittiness of the drink took the boys a little by surprise. Dylan said that he didn't like chunky hot chocolate; Riley said that it was like chocolate polenta.
