When we were waiting around in the parking lot on our Fathers' Day rafting trip on the Stanislaus, one of the other moms mentioned that her family liked bacon waffles. That's all I heard. But it was stuck in my mind. Bacon. Waffles. Hmmm...
While I'm not a huge waffle fan, my boys are. And bacon? Well, that goes without saying. So, this morning for breakfast, I gave it a shot.
2 strips of applewood smoked bacon, chopped and cooked till browned and crispy + bacon grease
2 C white whole wheat flour
2 T organic granulated sugar
2 t baking powder
2 eggs
1-1/2 C milk
2 T olive oil
2 T melted butter
Place all the dry ingredients into a mixing bowl. Add the wet ingredients and stir till just moistened. Fold in the cooked bacon and its grease. Cook in your waffle-maker according to its directions. Serve with a smear of butter and a drizzle of maple syrup.
