Cooking Around the World: Mauritania

We have been stalled in our Cooking Around the World adventure. I guess the more accurate thing to say would be that I have been stalled. The countries coming up on the list just didn't have exciting recipes that I was dying to try. But it's time. Time to get going on this list again.

 Country: Mauritania
Mauritania is a country in north Africa that shares its borders with Algeria, Western Sahara, Senegal and Mali. The official name of the country is ‘Islamic Republic of Mauritania’ and it has a population of about 3.3 million people. It used to be a French colony until it gained its independent in 1960.

The most striking feature in Mauritania is what some refer to as ‘The Eye of Africa’. It's actually a Richat structure and looks like an enormous bull's eye from a distance. The feature is about 30 miles in diameter and is believed to be formed by the simultaneous lifting of the underlying geology.

Quick Pickled Red Onions and Radishes

If you've been reading my blog for even a short amount of time, you probably know how much I love to pickle things. I was just telling a friend you can pickle - with vinegar - or you can ferment - with salt - for similar delicious effect. The latter has digestive benefits and I love to do that, but when I need that pop of sour flavor quickly, I whip up quick pickles that are ready in as little as a day or two. I've Pickled Blueberries , Pickled Asparagus , Pickled Cranberries , Pickled Pumpkin , and even Pickled Chard Stems ! This I did last night for an upcoming recipe challenge that requires I include radishes. Ummmm...of course I'm pickling them!
