Since we had some gluten-free friends coming to Dylan's birthday party, I picked up some gluten-free soy sauce at Whole Foods. You can't taste the difference (for the gluten-tolerant folks) - and it means that our gluten-intolerant pals can eat them. That's a no brainer.
2 T lower-sodium gluten-free soy sauce
1 T dark sesame oil
1 T minced ginger
1 T minced ginger
2 T crushed garlic
2 pound ground turkey
2 C spinach leaves, roughly chopped
2 C spinach leaves, roughly chopped
Preheat the oven to 375°. Combine all of the ingredients in a large bowl. With moist hands, shape turkey mixture into larger than walnut-sized meatballs. Arrange meatballs in a single layer on a parchment lined jelly-roll pan, about an inch apart. Bake meatballs at 375° for 30-40 minutes or until done. They will be firm to the touch. Drizzle with more gluten-free soy sauce while cooling.
