It's hard to believe that we are inching our way towards summer and the halfway point of 2021. Bulgogi Kimbap with Winter Ambrosia-Seasoned Rice #Sponsored

This is a sponsored post written by me on behalf of The Quail & Olive . Complimentary product was provided for this post and this page may contain affiliate links. However, all opinions expressed here are my own.   If you have been following me for awhile, or even just a little while, you might know that I am a huge proponent of using what you have on-hand. So, when I made kimbap for my mom's birthday last month, I reached for the Winter Ambrosia Vinegar from The Quail & Olive * instead of my mirin to use in the rice. Not traditional, obviously, but just as delicious...and local to me! Winter Ambrosia starts with organic apples and pears and offers a sweet-tart flavor to dishes. Besides when I made Bulgogi-Inspired Beef Jerky , I used apples to tenderize the beef; using pears is traditional. So, that's not too far out in left field on the flavor profile, right? Seasoned Rice Ingredients  serves 8 4 cups short grain rice (sushi rice) 4 cups water plus more for soaking ...

Dwarf Rockweed Salad

Today I met Ian O'Hollaren   of  Seaquoia  and was immediately a fan of his hand-harvested wild sea vegetables. I picked up 1/4 pound of his dwarf rockweed and 1/4 pound of another type. A quick rinse and a scant few ingredients made for an iodine-rich sidedish. Ingredients 1/4 pound dwarf rockweed (or substitute your favorite seaweed) 3/4 C diced organic tomatoes 1 T soy sauce 1 t sesame oil Procedure Place the rockweed and tomatoes in a small mixing bowl. Toss with soy sauce and sesame oil. Let stand for 10 minutes before serving.

This month, Karen of Karen's Kitchen Stories is hosting as we share stir-fries . She wrote, "The theme for November is Stir-Fry. Create a stir-fry featuring seafood of any kind. If you don't have a wok, a good skillet will also work just fine." Before I get to my recipe. Here's the rest of the #FishFridayFoodies' stir-fry menu... Sesame Greens with Overnight Oats and Cashews #FantasticalFoodFight

I love the Fantastical Food Fight coordinated by Sarah of  Fantastical Sharing of Recipes . For more information about the event, click  here . I haven't been very good at participating recently, but this year, I'm aiming to be better. To kick off 2018, we were given the challenge of making a recipe with oatmeal. So. Many. Possibilities. You can make savory oat bowls ; you can bake it into bread . I use it to make homemade granola and granola bars . And I've even made oat-chata . An InLinkz Link-up Overnight Oats But do you know what I see everywhere, but have never attempted myself? Overnight oats! I decided that this was the perfect event to do that. Still, Jake and I are off of added sugars this month, so I needed to go savory. Ingredients  serves 2 Basic Overnight Oats 1 C old-fashioned rolled oats  1-1/4 C milk  1/2 C plain Greek yogurt  1 T chia seeds  1 T flaxseed meal  freshly groun...

Seared Albacore Loins Salad with San-J Tamari Dressing #sanjtamarilite #MomsMeet #Sponsored

This is a sponsored post written by me on behalf of  Moms Meet .  I received complimentary product for the purpose of review,  but all opinions are honest and they are my own.  This page may contain affiliate links. Growing up in a Filipino family, soy sauce was on the table at every family event. But, years ago, when my husband went gluten-free I had to be careful about that condiment. So, when I was offered the opportunity to do a product review and develop a recipe with a gluten-free tamari by San-J, I was excited! And, as an added bonus, this version also had half the sodium. Sweet. About San-J  In 1804, San-Jirushi, the founding company of San-J, started a tamari soy sauce and miso company in the Mie Prefecure on the Japanese island of Honshu. Nearly two centuries later, the first tamari brewery was built in Henrico, Virginia as San-J. Eight generations later, a member of the founding family is still continuing the tradition of quality w...

{Gluten-Free} Kimchi Burgers

Kimchi burgers are a family favorite. So, after D and I finished our loop of the property on the Deuce Coupe, I whipped up these yummies for our anniversary lunch while we waited for Jake and R to finish their rides. Ingredients  makes 6 slightly larger than 1/4 pound burgers  1 pound organic, grass-fed ground beef (we used a 15% fat) 1/2 pound ground pork 2 T ginger syrup 4 cloves garlic  3 T gluten-free soy sauce or tamari 1 T chile sauce 1 t toasted sesame oil freshly ground pepper freshly ground salt Also needed buns (I used a mixture of gluten-free, regular, and pretzel), bell peppers, kimchi Procedure Prepare grill. Combine all but the last two ingredients and the extras. Divide the mixture into 6 equal portions, shaping each into a 3/4" thick patty. Place patties on a grill rack coated with cooking spray and grill on each side until your preferred level of doneness. Grill the peppers and toast the buns, too. ...
