I used some of my rhubarb bounty this weekend to make a rhubarb compote. So easy, so versatile.
6 C rhubarb, washed and chopped
1/2 C fresh orange juice
1/2 C organic turbinado sugar
Combine all ingredients in a large flat-bottomed pan. Bring to a boil over medium heat, stirring occasionally. Cover and simmer gently for about seven to ten minutes. Rhubarb will begin to soften. Uncover and continue to cook another five minutes. Remove from heat. Let cool.

With this batch, we went sweet, serving it on top of our pane di pasqua.
