I was craving something sweet, so I decided to bake some cookies. I thought about Italian amaretti, but I was out of almonds; I considered gingerbread, but didn't have any molasses. I did have everything I needed to make some lavender sugar hearts. So, my decision was made for me.
1/2 C butter
1/2 C organic granulated sugar
1-1/2 C white whole wheat flour
1 T organic lavender florets*
1 egg
Cream the butter and sugar together. Mix in the flour and egg until a ball forms. Cover and chill for at least 15 minutes. Preheat the oven to 400 degrees. Roll out the dough to 1/4". Use whatever cookie cutters you want; I have every size heart cutter known to man and decided to use the smallest one. Bake for 15 minutes. Let cool for 5 minutes before removing to a wire rack. Cool completely and serve with a strong espresso.
*The lavender came from a bunch of dried lavender that my friend Beth gave me months ago. Thanks, Beth, I finally was inspired. Delish.
