What does this photo mean? It means that I just started my second attempt at rhubarb liqueur. Last year's version was fantastic, but never took on the rosy hue I wanted. Within 30 seconds of submerging my rhubarb chunks this year, the vodka already began to turn red. Woohoo. I'm excited. Now I just have to wait four months to try it. We'll be sipping this at Thanksgiving this year!
I made a few changes to v.2. We'll see how it goes. Here's what I did tonight...
2 C organic granulated sugar
2 C raw honey
5 C chopped rhubarb
1.5 L vodka
Wash and trim rhubarb. Slice into thin slices. Combine rhubarb and sugar and stir well to combine. Pour honey over the fruit and vodka over that, mix well, cover, and let the mixture age in a cool place for 4 months. Stir once a week or once every other week. The color will change to a rosy red.
