Eggplant Boats with Avocado Cream

Halve and roast eggplants till softened in a 400 degree oven. Click to read how I roast eggplants. For this recipe, don't scrape out the meat for eggplant puree; use the roasted eggplant half as is.

Top with an avocado cream, fresh tomatoes, fresh cilantro, and chevre (goat's cheese).

Avocado cream is 1 C of sour cream and 1 ripe avocado mashed together.
