Kale Salad with Strawberry Vinaigrette #SundayFunday


Today the Sunday Funday group is staying healthy with salads. Kale Salad with Strawberry Vinaigrette

Kale salad is a family favorite. But when I saw strawberries coming into the markets this week, I decided to put the two together. This sweet and tart dressing is made with pureed strawberries, honey, vinegar, and oil. Since the berries are pureed in the dressing, it doesn’t matter if they are a little overripe. Just avoid any moldy berries

 Ingredients

Strawberry Vinaigrette
  • 1 cup strawberries, stemmed and quartered
  • 1 Tablespoon honey (I used a local avocado honey) 
  • 5 Tablespoon red wine vinegar 
  • 1/3 cup olive oil 
  • 1 teaspoon salt 
  • 1/4 teaspoon freshly ground black pepper

Salad
  • kale, hand-torn into small pieces (I used Lacinto kale, but you can use any kind)
  • fresh strawberries for garnish
  • crumbled feta for garnish

Procedure 

Combine the strawberries, honey, vinegar, olive oil, salt, and pepper in the bowl of a food processor or blender and puree until very smooth, about 2 minutes. 

Place kale in a large mixing bowl and dress as desired. Toss to coat completely and turn onto a serving platter. Garnish with fresh strawberries and feta cheese. Serve immediately. The dressing will store in the refrigerator for up to 2 days. Just whisk it before using if it has separated.

    1. I was lucky to get strawberries at the farmers' market last weekend. Maybe it was an early crop.

    1. Yes! I hate wasting food, but my boys get picky about slightly mushy strawberries. This is the perfect solution.

  5. What a fabulous way to use over ripe strawberries! We've been buying strawberries at the strawberry stands for a couple of months and definitely could use this salad!

  6. What a wonderful way to enjoy kale, with a tangy and sweet homemade strawberry vinaigrette. A great way to use up slightly mushy strawberries too.

Quick Pickled Red Onions and Radishes

If you've been reading my blog for even a short amount of time, you probably know how much I love to pickle things. I was just telling a friend you can pickle - with vinegar - or you can ferment - with salt - for similar delicious effect. The latter has digestive benefits and I love to do that, but when I need that pop of sour flavor quickly, I whip up quick pickles that are ready in as little as a day or two. I've Pickled Blueberries , Pickled Asparagus , Pickled Cranberries , Pickled Pumpkin , and even Pickled Chard Stems !
