Raspberry Roll Cake #NationalRaspberryCakeDay #SundayFunday

Today the Sunday Funday group is sharing raspberry cake recipes. Toothy Berry Pie à la Mode

I was shocked to discover that I have never blogged my berry pie recipe. Shocked! Because it's something that I make every summer...and multiple times throughout the summer. And I was even more surprised to discover that summer berries weren't yet at the markets in beautiful, overflowing containers. There were some, but they were ridiculously pricey. Frozen berries to the rescue; they work just as well.   I had some fun with natural food dyes and cranked out a JAWS-inspired design. My best friend's older son said, "Aunt Cam, that shark needs braces." True enough. Patriotic Panna Cotta

After a great dinner at one of our favorite restaurants, D asked if I would make some panna cotta. I had all of the ingredients I needed. Done deal! I served these for breakfast this morning. Yep. Dessert for breakfast...it must be a holiday. Ingredients 1 C whole milk 2 T unflavored powdered gelatin 2 C organic heavy whipping cream 1/3 C maple syrup 1 T organic granulated sugar 1 T vanilla paste 2 C assorted fresh berries (for this 4th of July, we used blueberries and raspberries) Procedure Place milk in medium saucepan. Sprinkle the gelatin over the top and let stand for 3 to 5 minutes to soften. Stir over medium heat until the gelatin dissolves, approximately 5 minutes.  Add the cream, maple syrup, sugar, and vanilla paste. Cook over medium heat for 5 to 7 minutes. Do not let the mixture boil. Place berries in the bottom of your serving dish, then pour the cream mixture over the top. Cool slightly. Cover with plastic wrap, then refrige...

#SundaySupper: Savory Red, White, & Bleu Truffles {Independence Day Picnic}

Welcome to #SundaySupper's giant virtual picnic in preparation for U.S. Independence Day on July 4th and Canada Day on July 1st. I'd say that's grounds for a picnic, don't you? Years ago our city used to do festive parades. With budget cuts and all that...it is no more. But here are a few (old) photos of my mini-patriots from back in the day... So, in the vein of red, white, and blue, I'm sharing a recipe for Savory Red, White, & Bleu Truffles. I got the idea from this week's hostess, Jane of Adventures in Dinner  when she shared her  Savory Truffles  during a #BrunchWeek event this year; I had bookmarked them and adapted to make them Independence Day appropriate. Ingredients 1 C chevre, divided into two bowls 1 T fresh blueberries, smashed 1 T fresh raspberries, smashed 2 T chopped fresh herbs (I used a mixture of parsley, dill, and mint), divided into two bowls 1 T parmesan, grated 1 T bleu cheese, crumbled 1 t chili paste,...

Raspberry-Avocado Ice Cream

Another day, another batch of homemade ice cream...D requested raspberry. I had an avocado and wanted to try it in the ice cream. No one could tell, even after I told them. That just means I'll have to try a completely avocado ice cream soon. Ingredients 1 C organic heavy cream 1/2 C organic granulated sugar juice from 1 organic lemon 1 avocado, diced 2 C organic raspberries Procedure Place all of the ingredients into your ice cream maker and process according to your machine. Ours took about 40 minutes to come to a soft, gelato-like texture.  Spoon ice cream into a container and freeze for 30-60 minutes before serving.

Culinary Telepathy + Ice Cream Sandwiches

We were heading over to our friends' house yesterday for dinner and I offered to bring dessert. D and I had made homemade raspberry-blackberry-chocolate ice cream. And I had in my head that I wanted to make ice cream sandwiches. So, during my lunch hour, I ran out to see if I could pick up any cookies, but the small ones I found were rock hard and the big ones were waaaaay too big. I skipped it. When I got home from work, D had baked homemade snickerdoodles with Nonna. And they were the perfect size and texture. Talk about culinary telepathy! I don't have D and Nonna's cookie recipe. I'll get it. But I do know that instead of just rolling the dough in cinnamon and sugar like people normally do, D rolled it in a mixture of spices that included cardamom, sea salt, and black pepper. Raspberry-Apricot Flaugnarde

I originally called this a 'c lafoutis ' when I called the boys to the table this morning - clafoutis 's ready!  Clafoutis is as easy to make as it is fun to say. Klah-foo-tee! But I realize now that I was incorrect. This is a  flaugnarde.  Clafoutis is a dessert that comes from the Limousin region of France and is made with black cherries; other variations are made with plums, prunes, apples, cranberries or blackberries, but those are called  flaugnarde . Since mine is made with raspberries, a  flaugnarde it is. And here's another interesting tidbit, for  clafoutis  purists, the cherries are baked with their pits intact. Also, I skipped the almonds and subbed Jenn's homemade apricot liqueur for amaretto. 2 C raspberries 4 eggs 3/4 C organic granulated sugar 3/4 C white whole wheat flour 1 C milk 2 T apricot liqueur powdered sugar for dusting Preheat the oven to 350F. Butter your baking dish(es). The amounts above gave me one 9" flaug...

Honeyed Fruit Salad for Anna

When we received the invitation for Anna's 40th birthday party, the boys were dancing around the house: "We're going to La Balena, we're going to La Balena!" Then I told them that we needed to bring a potluck item and Dylan announced that he was going to make it. What are you going to make? I asked. "Whatever looks good that day." Oh, you are soooo my child. So, yesterday was the day and we were at the market. He spied some plump berries and decided on a fruit salad...with mint...and cardamom. Okay! He washed, he sliced, he tossed, and he garnished with bee pollen to make Anna's birthday fruit salad. This is so easy, I almost loathe to call it a recipe. But it is repeatable and it is delicious. Fill the bowl with whatever fruit you want to use. Dylan used strawberries, blackberries, raspberries, and grapes. Dress it with 1 T honey, 2 t vanilla, a dash of ground cardamom, and 2 T of chopped fresh mint. Toss and sprinkle with bee pollen for...
