The Easiest Caramel Apples Ever

I decided to start off #AppleWeek by using an all-inclusive caramel apple kit from one of our event sponsors Chocoley. [updated January 2020: unfortunately Chocoley is no longer in business, so I have removed all of the links to their site!] Okay, it's not actually all-inclusive; you do have to provide the apples. But what do you do when 5 pounds of chocolate and 2.5 pounds of caramel show up at your door? You have an impromptu caramel apple party. And, really, the Gourmet Caramel Apple Kit provides everything you need for 25 to 30 caramel apples except for the apples.

This caramel apple kit comes complete with:
  • 5 lb. Brick Chocoley Gourmet Caramel;
  • 5 lb. Chocoley Bada Bing Bada Boom Candy & Molding Gourmet Compound Chocolate (I got the Dark Chocolate);
  • 1/2 lb Piping Bags - White Compound Dipping Chocolate 2 Pack (1 lb Net Wt.) for decorating;
  • 35 Caramel Apple Sticks & 35 Jumbo Cell Caramel Apple Bags & 6 Heavy Weight Dipping Sheets;

Ingredients
  • Gourmet Caramel Apple Kit from Chocoley
  • apples (I offered three different kinds)
  • assorted toppings (I offered diced candied ginger, other chocolate chips, sprinkles, and quins)


Procedure

Melt caramel and chocolate in mixing bowls over simmering water.


Secure apples on sticks.


Dip apples in caramel. Let harden.


Then dip in chocolate.


Decorate as desired with sprinkles, quins, and more!

After the kids were completely sugared up, the adults jumped in and made a few. But, we sliced the apples and shared...unlike the kids who devoured their own creations and went back for seconds. And thirds.


This was a really fun evening. I enjoyed the high quality of the Chocoley products and the ease of setting up a caramel apple party.

Quick Pickled Red Onions and Radishes

If you've been reading my blog for even a short amount of time, you probably know how much I love to pickle things. I was just telling a friend you can pickle - with vinegar - or you can ferment - with salt - for similar delicious effect. The latter has digestive benefits and I love to do that, but when I need that pop of sour flavor quickly, I whip up quick pickles that are ready in as little as a day or two. I've Pickled Blueberries , Pickled Asparagus , Pickled Cranberries , Pickled Pumpkin , and even Pickled Chard Stems ! This I did last night for an upcoming recipe challenge that requires I include radishes. Ummmm...of course I'm pickling them!
