Strawberry Japanese Soufflé Pancakes #SundayFunday

Today the Sunday Funday group is celebrating pancakes. Thanks to Stacy of  Food Lust People Love , Sue of  Palatable Pastime , Rebekah of  Making Miracles , and Wendy of  A Day in the Life on the Farm  for coordinating this low-stress group. Gamjajeon (Korean Potato Pancakes)

I already shared my recipe for this month's Food'N'Flix event: Siguemchi Namul (Korean Spinach Salad) . But I wanted to post a recipe for the Korean potato pancakes that I served alongside that salad. These were, as D commented, "less chunky, Asian latkes." Okay. Ingredients 1 pound organic potatoes (I used Yukon gold potatoes), scrubbed and cubed 1/2 onion (I used a red onion) 1/4 t salt 3 to 4 T flour (amount will depend on how watery your potatoes are) oil for frying (I used canola oil) Also needed: rimmed skillet, dipping sauce for serving Procedure Place potatoes, onions, and salt in the bowl of a food processor and blend until you have a smooth paste. Add in the flour until you get a thick batter consistency. The amount you use will depend on how watery your potatoes are; I used just over 3 T. I saw a post yesterday that a blogging friend of mine - Dee from On the Move - In the Galley - had succumbed to cancer this month. I rarely use the f-word, but, I seriously wanted to scream 'F--- you, cancer!' I was reminded of this book when I read Cara Nicoletti's Voracious  last week, so I tracked down a copy of In the Night Kitchen by Maurice Sendak.* And we read it, as a family, over the weekend. Jake said it looked familiar, but I don't remember owning it. Though we do have Where the Wild Things Are  in about six different languages and even had a Wild Rumpus for R's 6th birthday! How I miss the days when I dressed them up as book characters...now we argue about the existence of Big Foot, discuss whether you can actually create a perfect circle mathematically, ponder how we know what we know, and they talk about programming languages that are Greek to me. Controversy The boys remembered that I had a DVD of In the Night Kitchen  and they thought it was creepy when they were little. Maybe we only viewed it once, because I don't remember it at all. {Gluten-Free} Banana Buckwheat Pancakes

The boys needed something hearty to start their day. They will be smashing tile, loading boxes, and making a run to the dump later this morning as they help Daddy with the house remodel.  "This is not a relaxing summer vacation!" wailed the Wom this morning.  I know. How about some pancakes? Pancakes always brighten his day. And, I have to admit that I can't make regular fluffy pancakes to save my life. But, oddly, I have made these gluten-free pancakes a few times and they are a hit. Every. Single. Time. Ingredients  makes eighteen 3" pancakes 4 medium overripe bananas 2 eggs 2 C milk 1 C gluten-free flour blend 1 C buckwheat flour 1 T baking powder 3 T organic granulated sugar 1 t pure vanilla extract butter for cooking Procedure Smash bananas in a large mixing bowl. Syrena's Seduction Kimchijeon (Kimchi Pancakes) for #TripleSBites

Kimchi pancakes, or  kimchijeon , are crispy, chewy, and full of the spicy goodness of homemade kimchi. I usually fry up small cakes and thought they would be perfect for a #TripleSBites appetizer. They were! Even better - I was able to use products from three of our event sponsors. Just for fun...here are the (purported) aphrodisiac qualities of this appetizer... Chili peppers : The capsaicin in chili peppers heats up the body, increases blood flow, and causes the brain to release endorphins, which are feel-good chemicals. Many cultures throughout history have claimed peppers as an aphrodisiac.  Ginger : Like chili peppers, ginger increases circulation and body temperature. Legend has it that famous French courtesan Madame du Barry provided ginger to all of her lovers to increase their desire and improve their pleasure.
