A Trio of Citrus Curds for Easter

I adore citrus curds. It's not just the sweet and tart combination, which I love, but they are so pretty and remind me of Easter eggs. I thought it fitting to whip up some Spring-hued curds for this weekend. I am not sure what we'll be slathering these on - brioche or biscuits are a possibility - but I wanted to share the process since you have time to make your own before this weekend's festivities. The ingredient list is the same for each, so I'll just share the proportions and process one time...with photos of the three different kinds that I made this time around: blood orange, Bearss lime, and Meyer lemon. These are not processed or preserved, so use the curd within a week. Ingredients makes approximately 3 cups of curd 1 cup freshly squeezed citrus juice 1 cup organic granulated sugar 6 eggs 3/4 cup (1-1/2 sticks) salted butter Also needed: balloon whisk; clean jars with lids; plant-based food dye, optional* *I used a splash of plant-based green food dye for the ...

Fig & Minneola Tangelo Cake #TheCakeSliceBakers

Here we are the February 2021 edition of the Cake Slice Bakers. For 2021; we are baking from  Little Everyday Cakes: 50+ Perfectly Proportioned Confections to Enjoy Any Day of the Week  by Candace Floyd. * I can't believe that we're already in a new year. In many ways 2020 dragged on as the shelter-in-place orders continued month after month; on the other hand, it was a completely blur because there weren't milestones to mark the passage of time. In this group, we are given a selection of three cake recipes. We each choose one cake to bake, and then on the 20th - never before - we all post about our cake on our blogs. There are a few rules that we follow, but the most important ones are to have fun and enjoy baking & eating cakes! Follow our  Facebook ,  Instagram , and  Pinterest   pages where you can find all of our cakes, as well as inspiration for many other cakes. You can also click on the links below to take you to each of our cakes. If you...

Halibut agli Agrumi

I originally decided on this dish for an upcoming #ItalianFWT event. In July we're pairing and sharing with Chiaretto. So, I went searching for traditional dishes from the same region. I came up with Trota agli Agrumi , or trout with citrus. It's common in the Lake Garda area where trout is plentiful. Well, trout isn't that common where I am, but I had received the opportunity to purchase an entire halibut though our CSF (community-supported fishery), Real Good Fish . I figured that halibut cooked this way would be fantastic. But, first, I had to fillet the whole fish. I mentioned it to Jake and came home to the fish cleaned and filleted. Did you take any photos of the process for my post?  I asked. I got a blank stare in return. I'm writing about this for a post...did the boys take any photos of you filleting the fish? Any photos at all?! "I'm not a food blogger," he responded. But I am!  I almost wailed. "Sorry," he ...

Orange Foods + Citrus-Glazed Salmon #7Days7ColorsChallenge

Here we are at Day Two of the #7Days7ColorsChallenge! You can read more about it: here . Today is brought to you by the color orange. Years ago, when we lived in the Mid-West, I had a disconcerting conversation with another parent at my son's third birthday party. "Do you have any orange food?" he asked. "My daughter is an on orange food kick," he continued, "and she will only eat orange food." Oh, sure. I have some carrots and mandarins. Will that work? I remember thinking he was embarrassed as he explained what he meant. But, in hindsight, I don't think he was embarrassed; he was just matter-of-fact. "No, I mean orange as in Doritos or Cheetos or Cheez-Its." She likes cheese, then. I have Colby which has orange spots in it. Do you want that? "Do you have any slices of American cheese?" No. I finally found a package of Goldfish in the pantry that kept her happy till the cupcakes which weren't oran...
