Crawdadding with Cousins Means Jambalaya #FishFridayFoodies

It's time for Fish Friday Foodies' July 2020  event. W e are a group of seafood-loving bloggers, rallied by Wendy of  A Day in the Life on the Farm , to   share fish and seafood recipes on the third Friday of the month.  And this month, Wendy is hosting. She asked the bloggers to share recipes of fish cooked outside, writing, " Think of the type of meal you would make while camping or picnicking.  Foil packets, grilled on a grate, placed in a fish basket and cooked over a campfire.  Or how about an old fashiioned outdoor fish boil.  Anything is game as long as it is cooked outside." The Trinity, a S'mores Variation

There are certain thing we always have when we're camping. S'mores are one of those. A few years ago, I even served S'mores for Breakfast .  This year, on the last day of the trip, we had to use all the firewood...and eat all the s'mores ingredients. "Mom, we have to make all the s'mores. You never let us have s'mores at home." True. The boys decided to try a variation that their friend Trinity had made during one of our Halloween camping trips: marshmallows (roasted or not), dipped in melted chocolate, and rolled in crushed graham crackers. D's Camp Kale Salad

When my garden goddess of a sister-in-law invited us to "come take as much kale as [we] wanted" from her beds, as we headed to the coast, I don't know if she really understood what that means to the Enthusiastic Kitchen Elf. He loves his kale! He plucked and plucked, then asked if he could have some of her marigolds. She let him. We had so much kale that we made this salad three times during the rest of our camping trip. It was delicious each time. Ingredients 1 to 2 bunches kale, larger ribs removed and torn into 1" pieces 2 to 4 T olive oil zest from 2 organic lemons juice from 4 organic lemons freshly ground sea salt freshly ground pepper fresh herbs, destemmed and roughly torn (we used a mix of dill, parsley, and marigolds) Procedure Place the kale in a large mixing bowl. Blackberry S'mores for Breakfast

"S'mores for breakfast, boysies!" I hollered from the picnic table about our last campsite of the trek. Silence descended and sticks stopped flying across the site. What did you say, Mommy?!?  both boys gaped. Actually, I think all three of my boys just stared at me. But after 10 days of cooking in the wild, and on the verge of heading home, I was done. Done, done, done, done, done. Done cooking on one burner. Done smelling like a campfire. Just plain done. And since we had skipped s'mores the night before, everything was ready to go. Jake did suggest that we hike up to pick fresh blackberries and stick them in there. That was slightly redeeming, nutritionally speaking. So, I strapped on running shoes and off we went. Last night, for our annual Halloween camping trip all the families brought whatever they wanted to toss on the grill. Carnivores'R'Us! They were making fun of us though as almost everyone brought sausages and hot dogs and my Love had requested a rack of lamb. Done deal, baby. And, yes, I do think that's camping food! Salt-crusted Rack of Lamb. Here's my garlic-salt version . Last night I rubbed the rack with sea salt and crushed lavender. And I didn't get any photos of the finished lamb lollipops because a friend was pouring these for me all night... Blame Paul.

Campfire Cuisine: Gourmet Recipes for the Great Outdoors {Cookbook Review}

When Quirk Books was preparing to release a new edition of Robin Donovan's  Campfire Cuisine: Gourmet Recipes for the Great Outdoors,  they must have been clearing the old version from their coffers because I received a complimentary copy of the soon-be-replaced edition. I filed it away, among my cookbooks, waiting for our annual 10-day camping trip. Just got back... Not to toot my own horn, but I am a seasoned home-cook and a veteran camper. So, I just jumped right to the recipes and began making my grocery list without reading too much of the introductory material. I have to admit that, at first glance, I balked at several recipes: San Francisco Cioppino and Barbequed Peking Duck Wraps out in the wild?! Please. And this isn't a book I would have picked up on my own even though I love cooking in the wild .
