Caramelized Onion Tart

When I got the email from the room parent in Riley's class about the class end-of-year party, I was reminded why she is a culinary hero of mine. Her idea: a feast with foods made after the chapter titles for Esperanza Rising , the book they are currently reading in class. So, she asked for parents to bring dishes featuring Los Higos  (figs), Las Uvas (grapes), Los Aguacates  (avocados), and more. I signed up for Los Cebollas  (onions) and decided on a caramelized onion tart.   The Crust 2 C white whole wheat flour 1/2 C butter 1/2 C cold water Use a pastry cutter to blend the butter into the flour. Add the cold water and mix lightly until it forms a ball. Roll the dough out, between two sheets of parchment paper, and lay into a tart pan.
