Drop Buttermilk Biscuits #CulinaryCam

May 14th was National Buttermilk Biscuit Day. So, this is a few days late, but, really, who is going to quibble about a few days delay. Besides, we make biscuits all year long...not just on a designated  national food holiday. I used this drop buttermilk biscuit as a comparison with a laminated drop biscuit in a Culinary Cam YouTube video. See that here...or there . Ingredients makes approximately 9 2 cups flour 1 Tablespoon baking powder 1 Tablespoon organic granulated sugar 1/4 teaspoon salt 1 cup buttermilk (or whole milk if you don't have any buttermilk) 1/2  cup (1 stick) melted butter Also needed: baking sheet; silicone baking mat or parchment paper Procedure In a large mixing bowl, stir together flour, baking powder, sugar, and salt. Stir in buttermilk and melted butter. Once everything is combined, let stand for 30 minutes. Preheat oven to 450 degrees Fahrenheit. Line a baking sheet with a silicone mat or parchment paper. Use a spoon to drop batter onto baking sheets....

Laminated Biscuits #BreadBakers

#BreadBakers is a group of bread loving bakers who get together once a month to bake bread with a common ingredient or theme. You can see all our of lovely bread by following our  Pinterest board  right here. Links are also updated after each event on the  Bread Bakers home page .  We take turns hosting each month and choosing the theme/ingredient. This month Sue of  Palatable Pastime  is hosting and asked the bloggers to bake biscuits or scones. Sue wrote: "Bake up a biscuit or scone    using yeast rather than just baking powder.   These bake up quick so the oven    won't be on that long in this warm summer month." Recipe Testing: Laminated Biscuit Strawberry Shortcake

When I saw that the April Fantastical Food Fight focus was 'strawberry shortcake', I paused. The first thing that came to mind were these dolls from the 80s! I really disliked dolls; my grandmother tried and tried to get me fascinated with Barbie. But, when she bought me these dolls, I was moderately intrigued. I remember her being thrilled and she bought me every single doll in the series - Apple Dumplin, Rasberry Tart, Mint Tulip, Cherry Cuddler, and more. When I was a kid, I loved that the dolls' hair smelled. Now I wonder: What kind of awful chemicals made those dolls smell for so long!?! image from toysrus.com In any case, I started asking around. "What do you think of when I say 'strawberry shortcake?'" Friends and family all had differing answers. Some said the base was a sweetened biscuit; others were adamant that the base was a pound cake. Most intriguing to me was an angel food cake. But I decided to do more research and start recipe te...

{Gluten-Free} Swiss-Parsley Yogurt Biscuits

I always forget how much my boys (yes, all three of them) enjoy biscuits and gravy for breakfast! This morning, before we headed out for a day of sledding, I baked some biscuits full of Swiss cheese and fresh parsley...and they were gluten-free for Jake. Ingredients 2 C gluten-free flour 1 T baking powder 1 t salt 1/4 t freshly ground black pepper 4 T butter, cold and cubed 3/4 C whole milk plain yogurt 1/4 C fresh parsley, chopped 1/4 C shredded Swiss cheese milk, as needed Procedure  Preheat the oven to 450° F. Line a baking sheet with parchment paper. In a large mixing bowl, combine gluten-free flour, baking powder, salt, and pepper. Whisk to combine. Add butter to the dry ingredients. Gently fold the yogurt, herbs, and cheese into the dry ingredients, stirring until most of the flour is absorbed and the dough forms a shaggy ball. If the dough is too dry, add one tablespoon of milk at a time. Turn the dough out onto a floured cutting bo...

Aged Gouda-Bacon Biscuits

A local restaurant makes amazing bacon-cheddar biscuits. They are so amazing that one date night Jake and I skipped dessert and just ordered another batch of biscuits. I've had them on my list to make. So, one morning last weekend, I made a batch of bacon biscuits with some aged gouda that I had in the fridge. Delish. Ingredients 10 slices smoked bacon 3 C flour 1 1/2 t baking powder 3/4 t baking soda 1 1/2 C organic heavy cream 1/2 C aged gouda, shredded Procedure Cook bacon in the oven - or however you wish - reserve bacon grease. Drain cooked strips on paper towels, then chop. Preheat the oven to 400° F. Place all of the ingredients together in a large mixing bowl. Use a wooden spoon to beat the ingredients until it comes together into a cohesive dough. Turn out onto a parchment-lined work space and knead gently until smooth. Roll out the dough to about 1/2" thick. Cut into circles; I used a measuring cup. Lay biscuits on a parchm...
