When I received a care package from  The Republic of Tea * - with their new The Mandolorian teas - I knew that I would eventually get around to making a masala chai with the   Star Wars: The Mandalorian - Mysterious Black Tea   which is made up of b lack tea from Kenya, South India, Indonesia, Sri Lanka, and Darjeeling.  Masala Chai is a family favorite and it's super simple. But I did want to point out a couple of things because words matter and I try to be as precise as I can. Chai means 'tea'. Masala means 'spiced'. So this is just spiced tea. If you go to one of those corporate coffee chains and see 'Chai Tea', you can just give a little chuckle that they are offering Tea Tea. On Wednesday, Jake and I were celebrating two decades of marriage. And while we normally wouldn't have gone out for dinner anyway, I wanted to make a special dessert as we sheltered in place for our 20th wedding anniversary. I don't know about where you live, but people have been making a run on flour and eggs here on California's central coast. Seriously. I keep asking myself, "Did people decide they were going to teach themselves how to bake during this ordeal, or what?!?" Thankfully, Pia gave me a bag of flour and Lin gave me eggs. I love incorporating tea into dishes. So cooking with tea isn't new to me.
