#HotSummerEats: Balsamic Roasted Cherries over Burrata #sponsor

I love cherry season. And when we aren't eating them by the handful, I'm usually trying to come up with savory ways to eat them. Remember...I don't have much of a sweet tooth. For this last day of Hot Summer Eats , I'm sharing a relatively simple, cherry-laden appetizer. Casabella , one of our event sponsors, sent me a cherry-pitter. So, I gave it a whirl. Ingredients Roasted Cherries 4 C fresh cherries 1 T organic raw turbinado sugar 1 t Caribeque's Island Thyme Herb Seasoning* 2 T aged balsamic vinegar 1 t lemon zest  4 crushed cloves of garlic 1 T olive oil To Serve burrata crackers olive oil salt Procedure Preheat oven to 450 degrees F.  Pit your cherries. Ingredients Southern Gold Pork 3 to 4 pound boneless pork roast 4 cloves garlic olive oil 12 ounces barbeque sauce (I used Voodoo Chef's Southern Gold) 1/2 C water pretzel buns for serving Garlic Goodness Slaw 2 C shredded cabbage 1 T hot sauce (I used Intensity Academy's Garlic Goodness) 1 T vinegar 1 T mayo Procedure Southern Gold Pork Heat olive oil in a Dutch oven. Quickly brown garlic cloves in hot olive oil. Brown the pork roast completely for approximately 1 to 2 minutes on each side. Add in the barbeque sauce and water.  Bring to a boil then reduce to a simmer. Cover and simmer for 3 to 4 hours. By that point, you should have just a little bit of liquid left in the pot. Remove from the heat. Then, using two forks, shred the pork. It will absorb most of the liquid. Return the pot to the heat and cook until the liquid is completely absorbed. The best intentions...do not get your recipes written. SO sorry, all. We had R's 13th birthday party yesterday. Ten kids for seven and a half hours plus parents over for dinner after that. #HotSummerEats: Sauceology Sweet Potato Fries #sponsor

I was inspired to make these sweet potato fries after smelling and tasting Island Thyme Herb Seaoning by  Caribeque   and Chai Curry 'Chup by  Intensity Academy Gourmet Sauces . They are simple and I love that they are baked and not fried. Ingredients sweet potatoes, 1 person usually works well olive oil Island Thyme Herb Seasoning Blend* Chai Curry 'Chup* for serving Procedure Preheat the oven to 425 degrees F.  Cut them into fry-shaped pieces, trying to cut them into similarly sized pieces so the fries will bake evenly. Place the fries in a large mixing bowl and pour in enough olive oil to lightly coat the fries. Dust with seasoning. Then, turn the fries onto a parchment-lined baking sheet. Flatten them into a single layer without over-crowding. Bake for 15 minutes, then flip the fries. Bake for another 10 to 15 more minutes, or until the fries are crispy. Serve hot with some Chai Curry 'Chup by  Intensity Academy ...

#HotSummerEats: A Little Guava Tail #sponsor

Yesterday was the last day of school...and we decided to celebrate with little lobster tails, some bubbly (prosecco for the talls and root beer for the smalls), and a sweet treat! Another successful year ended with reflections on what they've learned, what they can do better next year, and what fun we have planned for the next eight weeks. #HotSummerEats: Grilled Haloumi-Watermelon Salad #sponsor

Grilled haloumi with watermelon is one of my favorite summer combinations. If you're never had haloumi, it's a semi-hard, brined cheese from Cyprus. I love doing a quick grill on it. For this easy salad, I used the Roasted Tomato Vinaigrette from  Out of the Weeds * as my dressing on the greens, then topped it with slices of watermelon and grilled haloumi. Ingredients salad greens salad dressing (I used the Roasted Tomato Vinaigrette from  Out of the Weeds *) haloumi cheese, thickly sliced watermelon, sliced fresh parsley for garnish Procedure Grill haloumi on a grill pan on the stove or on an actual grill. You don't need to grill it too long - just enough to warm it and get the grill marks. While the cheese grills, toss greens with dressing and plate individually.
