Double-Decker Guava Tres Leches Cake + The Puma Years #FoodieReads

I'll admit it: I ordered this book based on the cover alone. The Puma Years: A Memoir by Laura Coleman.* Isn't it stunning? On the Page image from amazon.com This is a memoir, plain and simple. It's Laura Coleman's journey from a rudderless young woman to a driven, dedicated activist who works with rescued animals. What started as a volunteer stint in the Amazon blossomed into a full-blown love affair with the work of rehabilitating animals, especially a puma named Wayra. But there is also a parade of animal characters that include Faustino and Coco, howler monkeys; Panchia, a semi-wild peccary; Lorenzo, a blue and yellow macaw; Sama, a jaguar; and Matt Damon, a rescued rhea. This isn't a treatise or prescription about animal rescue. It's simply Coleman's experience. And it's beautifully executed. Not-So-Tiny Tres Leches #TheCakeSliceBaker

Here we are at the April 2021 edition of the Cake Slice Bakers. For 2021; we are baking from  Little Everyday Cakes: 50+ Perfectly Proportioned Confections to Enjoy Any Day of the Week  by Candace Floyd. * I can't believe that we're already in a new year. In many ways 2020 dragged on as the shelter-in-place orders continued month after month; on the other hand, it was a completely blur because there weren't milestones to mark the passage of time. Jasmine-Infused Tres Leches Bundt #BundtBakers

Here we are in April with the monthly post for the baking group called Bundt Bakers. #BundtBakers is a group of Bundt loving bakers who get together once a month to bake Bundts with a common ingredient or theme.  You can see all our of lovely Bundts by following our  Pinterest board . Pastel de Mango con Tres Leches

When I was looking for a sweet bite to end our Cuban-inspired feast, I decided to finally take the plunge and attempt a tres leches cake. We had one for my dad's birthday in Costa Rica years ago. And since then, it's been on my to-cook list. This weekend, I did it! A note about the spices: they are not traditional. But I had my Enthusiastic Kitchen Elf and we all know how much the kid loves his spices. For those who don't speak Spanish, or haven't had this cake, tres leches means 'three milks.' That mixture is then drizzled over a vanilla sponge cake. It was surprisingly easy and not at all soggy. Nice!
