Chicken Taco Casserole

Earlier this week I posed a question. And this was my social media-conversation with a friend from high school. What's on your dinner table? Jill Chicken taco casserole! Nothing you'd ever make (too easy and too many canned foods involved) but I'm pretty sure it'll be a crowd pleaser! Camilla @Jill, that sounds like something my boys would LOVE...well, not the canned part...but they love chicken tacos. What else goes in there? Jill Chicken, salsa, black beans, cream of chicken soup... then layer with cheese and tortilla chips Camilla Okay, Jill. I'll give it my own twist sometime. Maybe this weekend. I'll keep you posted. Fish Tacos with Olallieberry Salsa

When we were on the way home from picking olallieberries, the conversation turned to answering this question: what should we do with all these berries? I love my boys' flavor-combining prowess! And one of Dylan's suggestions sounded like a winner - fish tacos with olallieberry salsa; Jake suggested adding a slaw to it. Sounded awesome to me! Pacific Cod, as long as it's caught in the U.S. and not imported is either labeled as a 'good choice' or 'best choice' according to the Monterey Bay Aquarium Seafood Watch . It also has a nice, mild flavor that lets the other flavors in the dish sing. I pan-seared the cod in butter until cooked through with a light dusting of freshly ground salt, freshly ground pepper, and paprika. Food Matters Project: Collard Greens-Kidney Beans Soft Taco

Looking for a quick dinner to throw together at the end of a busy holiday weekend - Happy Memorial Day! - I realized that I had all of the ingredients I needed for the  Food Matters Project  assignment this week. So, tonight, after picking up the boys from their friend's house, I came home and whipped up my version of Bittman's Beans 'N Greens Burrito.
