Thai-Inspired Yellow Curry with Tofu and Vegetables

I have one of those hammered spice tins with everything you need to make delicious, beautiful curries. And I enjoy playing with different combinations of flavors. But for a mid-week dinner, sometimes I cheat and use a pre-blended curry powder. No need to measure tiny amounts of ground coriander, cumin, turmeric, ginger, mustard, black pepper, cinnamon, and cardamom. This is curry in a hurry. Also, because Jake is plant-based during the week, this is a curry made with tofu and vegetables instead of chicken or another meat. Ingredients 1 package extra firm tofu, cut into bite-sized cubes 6 Tablespoons unsalted butter, cut into 2 Tablespoon-sized chunks 1 large onion, peeled and diced (approximately 1-1/2 cups) 1 T grated ginger (you can omit, if you don't have any, but we love the fresh ginger in this) 3 garlic cloves, minced 1 cup potatoes, scrubbed and cubed 1 cup sweet potatoes, peeled and cubed 2 cups carrots, chopped 1 cup celery, chopped 1 cup bell peppers, diced (I used a red ...

Kuri Kinton (Candied Chestnuts and Sweet Potatoes) for Osechi Ryori #Sponsored

This is a sponsored post written by me on behalf of The Quail & Olive . Complimentary product was provided for this post and this page may contain affiliate links. However, all opinions expressed here are my own.   Kuri kinton (栗きんとん) literary translates to 'chestnut gold mash' and symbolizes wealth. Including it as  part of a New Year meal is said to ensure good luck and prosperity for the coming year. You can see it in the platter above, between the shrimp and the lotus rootlets. First you have to cook and candy the chestnuts. Thankfully I was still able to find some at the market; and I like to roast them in the oven. Super simple. Also, while the original version calls for mirin, which is a Japanese sweet-savory rice cooking wine, I like using the  Winter Ambrosia Vinegar   from The Quail & Olive.* First, I'm a huge proponent of using what you have in your kitchen; but, second, I find the vinegar has similar sweet and savory qualities since i...

Braised Beef Over Spiralized Sweet Potatoes

This is an easy throw-it-all-together kinda dish that simmers all afternoon and is ready for dinner. It's the perfect lazy weekend dinner. Or, in this case, a one-pot savior after an afternoon of pulling out all the carpet in our house. We are in the middle of swapping out carpets for hardwood floors. I can't wait till it's done!! Jake and I spooned the sauce over spiralized sweet potatoes while I served it to the boys with regular pasta. "Thanks, Mommy! Real pasta!!" they hollered in unison. Apparently, they aren't fans of my spiralized veggies. More for us. Ingredients   Beef 1 T  olive oil 2 to 2-1/2 pounds beef, cubed (I used chuck...you can use really any cut of meat because it braises so long that it will be tender) 1 C onion, peeled and diced 6-8 cloves garlic, crushed 1 C diced carrots 1 C diced celery 2 C broth (I used beef broth only, but you can swap in some wine or water, too) 2 bay leaves 2 sprigs fresh thyme 1 C thinly s...

Oven-Roasted Murasaki Wedge Fries

As I was getting ready to test some burger creations for my #BurgerMonth posts, the boys asked about fries. What?  "Mom, you need to make fries to go with the burgers." Of course... Turns out that I didn't have any potatoes in my vegetable bin, but I did have Murasaki sweet potatoes. Have you ever had a Murasaki? It's a purple-skinned Japanese sweet potato with pale creamy-colored flesh. And what we love about it is its distinctive nutty flavor...and the fact that it stays firm when cooked. So, it's perfect for fries. Ingredients 4 to 5 Murasaki sweet potatoes, scrubbed and dried olive oil freshly ground salt freshly ground pepper Procedure Preheat oven to 425 degrees F. Line a baking sheet with parchment paper or a silicone baking mat. Cut the sweet potatoes into thick wedges, approximately 6 to 8 wedges per sweet potato. Place the wedges in a large mixing bowl. Drizzle with olive oil and toss to coat. Turn the sweet potatoes out onto the...

A Brutal, Complicated Tale + A Yam Revelation #FoodieReads

These are NOT yams. Homegoing by Yaa Gyasi* isn't a foodie read per se. But it was a book that I devoured in two sittings and it reminded me that I have always wanted to research and understand the difference between a sweet potato and a yam.  from penguinrandomhouse.com On the Page This is a wildly impressive undertaking for a debut novel. It's beautiful, visceral; it makes you want to squeeze your eyes shut against the ugliness while simultaneously compelling you to keep turning pages. If I had to distill it into one sentence, I would say: Each chapter illustrates the impact of slavery with a complicated relationship between slavers and slaves. And - surprise! - it's not just divided by white and black. This is an incredible, horrific look at history, colonialism, and slavery from Ghana to America, spanning nearly 300 years and many, many generations. Ghana in the 1700s. Half-sisters, Effia and Esi, are born to different mothers in different village...
